Pesto has been a staple ingredient in my kitchen for quite some time. Even though it’s a more expensive product, you can add flavor to any meal with just a small amount. Pesto Cheese Toast can be used as an appetizer, side dish, or snack. It’s like garlic toast‘s a more sophisticated cousin. 😉
HOW MUCH PESTO DO YOU NEED?
The best thing about tasty toast is that you can use any pesto or whatever you prefer. Basil pesto can be used, and a sun-dried tomato pesto or a kale Pesto. A Genovese Pesto is my favorite. It’s a creamy basil-style pesto. Filippo Berio and Classico are also good choices.
WHAT KIND OF BREAD SHOULD YOU USE?
This recipe is great for any French or Italian loaf bread. You have two options: cut the bread in traditional slices (see the photos), or cut the loaf half lengthwise. Then, slice the halved loaf into pieces like my Homemade Garlic bread recipe. You can choose the bread-to-topping ratio you prefer. You can also make this a pesto pizza with small bits of English muffins or naan.

It’s a great substitute for garlic bread and can be served with pasta or Tomato Basil chicken. But it’s great with a bowl of tomato broth. These little toasts are a great appetizer for parties! For dipping, you can serve this with warm marinara. This is my favorite way of serving it. I love scrambled eggs or fried eggs for breakfast. It’s hard to beat the egg-pesto tomato combo. !

INGREDIENTS
- 4 slices of bread ($0.66)
- 2 Tbsp pesto ($0.45)
- 1 Roma tomato ($0.28)
- 1/2 cup shredded mozzarella ($0.42)
INSTRUCTIONS
- Pre-heat the oven to 400oF. Place parchment paper on a baking sheet. Cut a loaf of French or Italian bread into slices about 1/2-inch thick.
- Spread 1/2 Tbps pesto on each slice of bread and place them on the baking sheet.
- Cut the Roma tomato into eight slices and then top each slice of bread with two slices.
- Add a generous amount of shredded mozzarella to each slice of bread.
- Toast should be baked for 10 minutes or until the cheese has melted and toast is golden brown. The baking time will vary depending on the bread you choose and your oven. Keep warm
